OG上的解释是，A要么they缺少指代对象，要么指的是wild animals.
假如指代wild animals的话，句子就成了"wild animals think (the fat) is good for cardiac health"，也是显然不合逻辑的。
A和B选项里，"than do livestock"和than livestock"是等价的(According to OG).
所以C选项里的"that of"就没有必要了。"than livestock"可以看做省略do的话，再加that of的确不合理。
碰到比较题里的比较对象还是会出错，要多加留意。
