我觉得这里用with没错，但是问题在于its regional influences 的表述是错误的。
独立主格是要修饰主句的，这里不是要修饰印度菜有很多种类这件事，而是在解释说明这些种类—每一种都是地区影响力的产物，用定语或同位语。借着你的回复，把这个题又做了一遍，做对了，哈哈哈。
its influences应该是可以的，比如my books
